1 egg
1 cup milk
1/4 cup oil
2 cups flour
1/4 cup sugar
3 tsp baking powder
1 tsp salt
Heat oven to 400*. Grease muffin cups. Beat egg; stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy. Fill muffin cups 2/3 full. Bake 20-25 mins or until golden brown. Remove immediately from muffin pan.
